The potatoes here really are particularly delicious. I should be doing more with them.

Roesti – now isn’t that an obvious thing to do to a spud in Switzerland, but I still haven’t got around to it.
Gratin – Stephanie Alexander’s, no other one will do.
Gnocchi – don’t have my recipe with me, but will find one.
Fish cakes – English style.

    I don’t dislike potatoes, but I tend to leave them off my fruit/veg box deliveries as I don’t use many. I do like making fishcakes though – my favourite is the Ivy’s recipe.

    I use a gratin recipe from an ancient old French cookbook my mother has. Once a decade, when I actually make a gratin….
