Wherein a truffle crisis is narrowly averted

My, did we almost make a terrible truffle accounting error the other day. Having lashed out on a black truffle, as reported recently, at about $1000/kg, Globus was selling the white variety on the weekend. Yes, we thought, why not? It was even a bit cheaper, only $900/kg, not $1000….

Except it wasn’t per kg at all. It was per 100gr. So, the white truffle is $9,000/kg. The one we’d picked out was $65.

In the end we settled for a small salami rolled in truffle, provenance unknown, expensive enough at $12 for a inch of it. Oh, wow. Was it heavenly? Yep.
