1 tin best tuna in olive oil
2 cloves of garlic finely chopped
2 chillis finely sliced
2 shallots finely sliced
2 tblesp olive oil and the oil from the tuna
some best quality tomatoes diced quite small. If they are cherry tomatoes, maybe 10 of them
1-2 tblsps Italian olive paste or to taste
parmesan cheese grated
While the spaghetti is cooking
Gently fry the garlic, chillis and shallots in the olive oil. When somewhat softened add the tuna and tomatoes. You just want these to heat through, not cook. Stir in the olive paste and test for taste, add more if you so desire.
Drain spaghetti, mix into the sauce, serve.
Seriously? This was so good we had it for lunch and dinner today!
